F & L Market has Double Q Salmon $2.99 a can. Use four of them to make these delicious Salmon Cakes for a crowd!
Makes 12 cakes
4 cans of double q (bones and skin removed)
1/2 Cup of Red onion diced
1/2 Cup of diced celery
3/4 Cup Red pepper diced
1/4 cup fresh parsley chopped
1/2 tsp Tabasco
1 tsp Worcestershire sauce
1 TBS Old Bay seasonsing
3/4 cup of Panko crumbs
1/2 Cup of Dukes Mayo
4 tsp Dijon zest of 1 lemon
2 eggs
Take care to clean the Salmon well and to not over mix. Allow to rest while you prepare the oil to fry the cakes to a golden brown.
Dipping Sauce:
1/4 Cup Dukes Mayo
1/4 Cup Sour Cream
2 tsp Dijon
2 TBS fresh chives
1/4 tsp dill weed
1/2 tsp garlic powder
1 tsp Tabasco sauce’
Salt and Pepper to taste
